Zomato-parent Eternal bets big on Blinkit’s quick-service

Eternal, the parent company of Zomato, is expanding Blinkit’s Bistro, a quick-service offering.

The service uses in-house kitchens to deliver meals within 15 minutes across Delhi-NCR, Bengaluru, and Mumbai.

Bistro currently operates more than 100 in-house kitchens in these regions. The use of in-house kitchens gives Eternal better control over food preparation timelines.

Despite the closure of Zomato Quick, the service had contributed approximately 8% to Zomato’s order volumes during its brief tenure.

Eternal’s stock rose 16% on May 5, following the announcement of Bistro’s expansion. This marks its largest single-day gain since the company went public.

🧠 Food for thought

1️⃣ The quick-commerce conundrum: fundamental kitchen limitations

Quick food delivery services face a persistent operational challenge that technology alone can’t solve: food preparation speed.

Eternal’s CFO explicitly acknowledged they had cracked fleet management but not kitchen readiness, highlighting why their “Quick” service failed to scale despite significant investment.

This mirrors industry-wide challenges where even successful operators like cloud kitchens creating Bolt-specific stations must limit offerings to just “8-10 items from a 75-item menu” to maintain speed.

The fundamental tension between speed, quality, and menu variety explains why quick-delivery services consistently struggle with scaling, despite consumer interest in rapid delivery.

This pattern extends beyond India, with most successful quick-delivery models globally focusing on limited, standardized food items that can be prepared with assembly-line efficiency.

The physics of food preparation remains a bottleneck that even the most sophisticated logistics systems cannot overcome without significant menu limitations.

2️⃣ The vertical integration strategy in food delivery

Eternal’s expansion of in-house kitchens represents a growing trend toward vertical integration in the food delivery industry.
