South Korean agency unveils AI to predict kimchi flavor

South Korea’s World Institute of Kimchi announced the development of an AI model capable of predicting kimchi flavor based on fermentation conditions, such as temperature and bacterial composition.

The model, created through collaboration with Chonnam National University, identifies nine key elements—including organic acids, sugars, and amino acids—that influence fermentation and taste.

Researchers conducted experiments inoculating cabbage with various lactobacillus strains and monitored bacterial growth under different temperatures to improve prediction accuracy.

The institute said the AI aligns with existing fermentation data and can be used for mass production and industrial applications.

The agency suggests the model could help standardize kimchi quality and reduce variability caused by unbalanced fermentation, potentially aiding global distribution.
