French foodtech startup Fungu’it secures $4.3m
French foodtech startup Fungu’it has raised €4 million (US$4.32 million) to enhance its sustainable flavor production efforts.
The funding round was led by Asterion Ventures, with contributions from Evolem and UI Investissement through Oser BFC.
Founded in 2022, Fungu’it uses filamentous fungi to transform agricultural by-products, such as flaxseed and sunflower press cakes, into natural flavorings.
The company implements a solid-state fermentation process, which lowers water and energy consumption compared to traditional methods.
The newly acquired funding will facilitate the establishment of an industrial pilot plant, cover patent filings, and aid in the development of a database to optimize production.
Additionally, Fungu’it plans to expand its sales team to promote its products in the growing plant-based food market.

🧠 Food for thought
1️⃣ The chocolate industry’s sustainability crisis creates market opportunity
Fungu’it’s chocolate flavor alternative addresses a well-documented environmental challenge in the cocoa industry.
Cocoa farming is a major driver of deforestation, particularly in West Africa, where 70% of illegal deforestation in Côte d’Ivoire is attributed to cocoa production 1.
The environmental impact extends beyond deforestation to include biodiversity loss, soil degradation, and carbon emissions, creating pressure on chocolate manufacturers to find sustainable alternatives 2.
With cocoa production concentrated in just two countries, Ghana and Ivory Coast account for 70% of global production. The supply chain faces significant climate and social vulnerabilities that innovative alternatives can help mitigate 1.
The timing of Fungu’it’s solution aligns with growing industry recognition that traditional cocoa sourcing faces long-term sustainability challenges, including pest pressures, climate change impacts, and ongoing social issues 3.
2️⃣ Natural flavor market evolution creates tailwind for bio-based innovations
The natural flavoring market is experiencing significant growth, exemplified by projections for natural vanillin (a key flavor compound) to grow from $475.9 million in 2024 to $1.02 billion by 2033, representing an 8.8% CAGR 4.
